Mango Chicken Salad

Mango Chicken Salad
6oz light vanilla yogurt
1/4c lite mayo
1/4c Major Grey's mango chutney
2tsp curry powder
1/2tsp salt
1 pkg. 2.25oz sliced almonds
2 celery ribs sliced (about 1c)
1 Granny Smith apple, unpeeled cored  the cut into chunks
1 whole roasted deli chicken chopped and de-boned
1/2 med red onion chopped fine (1/2c)
1/2c or 2oz golden raisins
6 large tomatoes cut into wedges

Start with a large bowl and a fork.  Mix yogurt, mayonnaise, chutney, curry powder, and salt.  Add almonds Celery, apple chunks, onions and raisins combine thoroughly.
At this point you can place tomato wedges around the chicken salad along with a serving spoon for multiple service or slice the tomato almost to the edge but not all the way trough.  Let it open up and fill with chicken salad.  You can also cover your platter with a nice curly lettuce for a more attractive presentation.  Then placing chicken salad over the bed of lettuce surrounding the salad with tomato wedges.
this will feed about 6 for a meal and 10-12 at a party.
