Corned Beef

Corned beef is easy to prepare however a crock pot is a must.  There are two types of Corned beef flat and round.  The flat is the traditional.  Both come packaged with seasoning.  Additional seasoning is available in the bulk spice area in produce at Schnucks.  The round is very lean and usually tough after cooking.  I prefer the flat.
Heat your crock pot to high add corned beef fat side up.  Empty seasoning package evenly over the fat.  Cover until juices begin to boil then turn heat to low and let it cook 4-6 hours.  Move corned beef to a platter let it sit for at least 7-10 minutes before serving.

This is awesome with boiled cabbage and or potatoes.  Remember St. Patrick's Day is Thursday!
