Spinach and Artichoke Casserole

Delicous side dish for any holiday gathering.  First defrost spinach in microwave, then use a potato ricer to get as much liquid out as possible.  If you dont have a potato ricer use a lint free cotton cloth, place spinach in the center, roll up and squeeze.  You may also soften cream cheese for about thirty seconds in the microwave.  Gather all items for recipe:
2 (10 oz. chopped frozen spinach)  Thaw                       1 (8oz pkg.) softened cream cheese
1 pkg. 15oz canned artichokes (drained)                          1 tsp. lemon juice
1/2 C. melted butter  + 2 TBS                                          1 sleeve cracker crumbs or 1c. Panko bread crumbs
(8oz. gruyere cheese)
     Pre heat oven go 350 degrees.  Use cooking spray to coat the bottom of 9x13 baking pan.  Drain spinach and artichokes then heat seperately in microwave just to hot. Place artichokes in the bottom of the casserole pan, covering with a layer of spinach.  Blend butter, cream cheese and lemon juice, then place layer over spinach.  Top with cracker crumbs and additional 2TBS. butter.  Bake for about 25 munutes or until hot and toping is toasted.  Do not over cook or spinach will be bitter.
  For a little something special you can add about 8oz. of grated gruyere cheese with the cream cheese mixture.  You may also have some round specialy crackers to eat it with.
