Cooking for the Holidays/Mexican Corn Casserole

Cooking for the Holidays was a hit.  We had lots of food and good ideas.  About twenty people were in attendance.  Next I will try to post the recipes so that you out of towers will not be left out.
Corn Casserole
2-Pkg Cream-style frozen corn                               1 med. green pepper chopped
1 lg. chopped onion                                                1 c. crushed crackers
1 Sm. jar pimiento                                                  1 c. grated cheese Mexican blend
1/4c butter                                                              1 jalapeño pepper chopped or red pepper to taste
1 tsp salt and pepper        

Combine all ingredients.  Bake at 350 degrees for 35-40 minutes.   Serve with Chicken chili, chips, and cheese casserole.   There is no good reason for the hostess to be stuck in the kitchen while guest are gathering and talking.  A nice theme buffet lets you assemble ahead and quick cook.  Leaving you time to share and visit with guest.  Along with these two dishes set out pico de gallo , extra chips, cheese and onions even some salsa or cheese dip.
