Balsamic Reductions

A reduction can pack a flavorful punch to a simple fruit, salad or meal.  Reductions are easy to make but do take a little time. This is time well worth it.  You will need:
Balsamic vinegar or Raspberry Balsamic vinegar (use a full bottle)
Pint container with a good seal
Jar Label
Some prefer a table spoon of sugar. ( Balsamic will naturally become sweeter while going through the reduction process)
large sauce pan
Whisk
Pour your choice of vinegar in an uncovered sauce pan, heat medium high heat to a boil. Add sugar now if you choose to add it.  Constantly whisk.  Lower the heat.  Do not cover.  Be careful not to burn your reduction.  The reduction will reduce to a thick syrup.  Pour off into jar to cool, identify jar with a label, date and your name.  After reduction is completely cool place lid on jar.  this can be used for all kinds of wonderful treats.
Balsamic reduction is wonderful as a bread dipper, drizzled over sliced pears,  or salad.
Raspberry reduction try nine teaspoons over three cups of  berries for example, strawberries, raspberries, blue berries, or black berries.  Cover for a few hours and serve Raspberry Balsamic fruit over ice cream or cheese cake.
