Octoberfest Bratwurst

1Lb original brat              1/2 gal apple cider        2TBS butter      1lg sweet onion    

Cover brat with apple cider sit for a few hours in covered dish.

In a grill pan add 3/4c apple cider heat to boil med hi heat and add brat.  Cook brats about ten minutes until outside is brown and center reaches 145 degrees.  Set brats aside, keep warm.
Add 1TBS butter melt then add 3/4c cider to griddle pan, heat to remove pieces from bottom of the pan.  Add onion cook until brown.  (caramelize the onions).

Another side item for this traditional German dish is sour kraut.  You will need one 2lb container of kraut caraway seeds and about 1lb Fuji apples cored in addition to cider listed in above recipe and thin sliced.
rinse and drain kraut add 1/2 tsp caraway seed.  After cooking onions in griddle pan remover to warming plate with brats,  add kraut (rinsed and drained) and 3/4c apple cider and 1lb thin sliced Fuji apples.  Cook until apples are soft and kraut is warm.
