Grown-up Grill Cheese

Here is an easy way to impress family and friends for lunch brunch or dinner.  Grown up grill cheese.  You will need:
10 slices apple wood smoked Gouda   2 medium sliced Asian pears
8 slices pancetta                                  3 TBS Spanish extra virgin olive oil
8 slices fresh sliced bread (Italian)        4 whole roasted red peppers (I use the ones from the salad bar)

Makes four sandwiches.

Put olive oil into small bowl.  You may add herbs if you like but not necessary.  Use a basting brush to lightly apply olive oil to only one side of each slice of  bread.

To prepare the Apple Wood Smoked Gouda, cut each slice into half.

Slice Asian pears into slices, about a quarter of an inch or slightly thinner, then place in a low to medium heated skillet.  Turn apple slice after about three or four minutes.  The apples should be slightly clear.  Set aside and keep warm.

The roasted red peppers, can be packed in water if so blot dry with a paper towel or lint free cloth.  Divide each of the whole roasted red peppers into half and heat up.  Set aside and keep warm.

In same pan on  medium  heat, place pancetta, cooking about three minutes on each side.  Remove the pancetta an place with other items to keep warm.  

Place the oiled side of two pieces of bread, down on the pan to toast.

Begin layering one slice of bread with pancetta, two pieces side by side to fit the bread.

Add 1/2 a slice apple wood smoked Gouda on top of the pancetta.

Top the cheese with Asian pear slices touching side by side.

Now top the Asian pear with the another 1/2 slice of cheese.

Then add the heated  1/2 of a roasted red  pepper. 

Top with 1/2 cheese slice. 

Now top with  the second slice of bread toasty side up.  Flip grill cheese over to heat on opposite side.  Take it off when the cheese is gooey and the bread is toasty.  Cut the grill cheese into half and serve.  Repeat assembly process for each sandwich.
 
This is an awesome lunch to go. After all ingredients are toasted or cooked and assembled.  Wrap the grown up grill cheese with press and seal.  Save in the fridge.  It can be heated in the microwave after the press and seal is loosened or removed, heat for about 30-45 seconds or until cheese melts.
