Swiss Chicken Linguine

Today I made a recipe at work that is quick and easy.  Hope you enjoy it.  Swiss Chicken linguine.
You will need:
1-11/2lbs chicken breast                                  1tsp Oregano
Linguine noodle or Quinoa linguine noodles       1tsp Basil
1 Zucchini  large                                               1Tsp salt/pepper
Pint Santa Sweet tomatoes                               13\4c shredded swiss cheese divided
3 TBS Spanish olive oil                                     1 med\large onion
                                                                         three cloves garlic chopped fine @ 11/2-3 tsp
Boil Noodles according to package directions.  Drain noodles in colander, you may need to run cold water over the noodles to keep them from sticking,
Measure spices
Chop onions and garlic, cut zucchini in half then slice, then slice tomatoes. Hold in three separate container.
Saute onions and garlic in  olive oil  until onions are clear, add chicken cook five to seven minutes then add zucchini, salt pepper oregano and basil. for about three minutes.  Zucchini should still have a crunch.  Toss in the tomatoes and 3/4's cup cheese.
In large bowl toss noodles with chicken and cheese mixture top with remaining cheese.
Quinoa pronounced kiːnwɑː This is an ancient seed that has been grown for thousands of years.  Now that many are having problems with wheat quinoa has become a replacement.  It is now available in most stores in a variety of products for example noodles and pasta shapes, grain, and even as chips.  Persons with any type of gluten intolerance will find quinoa as a handy substitution for wheat pastas.
