Have you had a date lately?

If you haven't tried a date lately this is the perfect time of year to do so.  Some say there is no difference between dates and figs but oh yes there is.  Dates look like enormous raisins with a pit or stone inside.  They are very sweet, natures candy.  The best way to pit fresh dates is to freeze them first.  Then with a very sharp knife slit the date about half way, from end to end then twist the knife slightly.  At this point you should be able to easily open the date and remove the pit.  Now if you want to dazzle friends try stuffing the dates. The recipe today, called for about 1 lb of fresh  Mojeweled dates, one 4oz container blue cheese crumbles and 2 TBS cream cheese softened and mixed together. Cook bacon till soft. Wrap the date and place on baking dish with the loose end down.. Heat at 350 degrees about five minutes.  Just slightly melt the cheese.
Quick tip:  For stuffing dates or most small pastry, use an appropriately large zip lock bag.  Place the filling in the bag. Squeeze the filling to one corner then snip the corner with the scissors.  Sch Zamm  your in business.
