Caramelized Pecans

Remember caramelized pecan or walnuts are good for several months if you keep them in an air tight container either a Ziploc or glass jar.  These taste treats are terrific as a salad topper or just as a snack.  This is also a lovely gift. You may want to make extra.  My family likes them hot, right after cooking.

1 lb pecans
2c brown sugar
1/2c water
sprinkle with Culinaria Korintje Cinnamon

Place brown sugar in Teflon or stick resistant pan.  Warm on Medium to Medium low heat, don't let it burn.  Add water bring to a boil for about one minute then add nuts.  Stir often for about five minutes.  Remove nuts when they have a nice coating of sugar.  Place on parchment paper in a single layer.  Lightly sprinkle with cinnamon.  When completely cooled place nuts in an air tight container.  Ziploc has some nicely decorated bags and a pint size glass jar decorated with ribbon and a label  is also attractive.
